Golurk's defining traits are its excellent moveset that gives it unresisted coverage and its Ground/Ghost typing, which helps it resist Electric, Fighting, Normal, Poison, Bug, and Rock-type damage. 🙂
STAB Fast Moves Mud-Slap and Astonish are literally clones of each other in PvP, having the same 4 DPT, 3.33 EPT, and 1.50s cooldown values. You can go with either, but Mud-Slap is preferred for better coverage as the Fast Move is combined with Shadow Punch and Dynamic Punch.
This establishes Golurk as a massive threat in the Great and Ultra Leagues, but remember that since it isn't too bulky, shield investment is desired. ‼️

🔵 Great League
Golurk is deadly in the Great League, using its high-damage Fast Move and cheap Shadow Punch to trouble opponents like Annihilape, Primeape, Carbink, Clodsire, Charjabug, Dewgong, and Gastrodon. 👀
As mentioned, it falls off when shields are down, so better use it as a lead or safe switch-in to tank resisted hits. A very handy Pokémon which, in the right hands, is the match-winner. 💯
🟡 Ultra League
Astonish Golurk excels in the (2-2) shield scenario, beating Cobalion, Registeel, Annihilape, Skeledirge, Cresselia, Ampharos, Talonflame, Virizion, Venusaur, Tentacruel, Typhlosion, Corviknight, Poliwrath, and Giratina Altered. Under (1-1), it loses to Giratina Altered and Venusaur but gains Primeape and Shadow Dragonite. 😳
However, it drops many core wins under (0-0). A potent sweeper under shields, Golurk is a great lead and switch-in (just like in Great League). Be wary when shields are out. 💁

Golurk is absolutely terrible in the Master League. Keep it for the lower Leagues please. 😅
